The remarkable aspect of the Randy Newberg EBS is that the product comes with three interchangeable blades. Not surprisingly EBS stands for Exchange Blade System. Each blade has its own function. The 12 cm long blade is extra thin for when you need to cut large pieces of meat into smaller pieces. The 9.5 cm long blade is slightly more solid and better suited for the more detailed tasks.
